Zucchini, which is another name for squash, comes from Italy and is a variant of a field pumpkin. It has a high nutritional value mainly because of the fact that it contains a lot of sugar and a variety of vitamins, such as C, PP, B1 and carotene. It is also important that the zucchini does not accumulate heavy metals. Zucchini Bread has become extremely popular in the 1960’s and the 1970’s and this was the time when any baked good that contained vegetables and used oil instead of butter was considered healthy.

How to make this bread?
Ingredients: 1/2 cup (50 grams) pecans or walnuts, 1 cup (240 ml) shredded raw zucchini , 1/2 cup (120 ml) grated raw apple, 1 1/2 cups (195 grams) flour, 1 teaspoon baking soda, 1/4 teaspoonbaking powder, 1/4 teaspoon salt, 1/2 teaspoon ground cinnamon, 1/2 cup (120 ml) safflower, corn, vegetable, or canola oil, 1 cup (200 grams) granulated white sugar, 2 large eggs, 1 teaspoon vanilla extract, 1/2 cup (25 grams) coconut (sweetened or unsweetened).

What to do?
-preheat the oven to 180°C and prepare a buttered or sprayed loaf pan.
-toast the pecans /walnuts for more or less 8 minutes
-grate the zucchini and the apple
-blend the oil, sugar, eggs, vanilla extract, mix it all together with the apple and the zucchini and add the flour mixture. Fold it with nuts and coconut and bake 55-65 minutes. If wrapped properly, it will stay fresh for a few days (can be frozen as well).

There are another types of zucchini bread as populat as the standard one.

1. The first is called the Chocolate Zucchini Bread. All the ingredients are the same (as previously mentioned), we only add 1/2 cup of baking cocoa. The blending and mixing procedures stay the same.
2. Zucchini Bread for Vegans – we remove eggs from the main recipe and substitute them with ¼ cup of soy milk or any other dairy-free milk. All the preparation staps stay unchanged.
3. Gluten-free zucchini bread- what should be substituted? All-purpose flour with 1 ¼ cup of fluten-free or almoond flour only. Easy as that! Other  baking procedures do not change at all.
4. Whole wheat zucchini bread – all the ingrediends remain the same except for the substitution of all-purpose flour with the whole wheat flour. We can also add  1 teaspoon of honey.

Why is zucchini bread so popular and healthy? Because it is low in calories. The 100 g of zucchini itself contains only 15 of them. Try and you will never regret!
